What I Eat In a Day + My General Diet
I am such a creature of habit and if left to my own devices, I eat almost the same five or so things all of the time. Generally, I feel my best when I stay away from dairy and gluten but always leave wiggle room when I eat out or my kids are cooking in the kitchen. I’m not NOT going to try what they’re whipping up! Plus, Ava has gotten really good in the kitchen!
I start every morning with 16oz or more of water followed by my coffee. Depending on the time of year, it’s either a hot or iced americano with a little vanilla creme Stevia and about 1/4c of Oatley oat milk. I usually have two cups and also have my Goli apple cider vinegar and ashwagandha gummy supplements. I swear the ACV gummies help with bloating and digestion and the ashwa gummies are for stress. And while I have a discount code (use CHELSEASYOGA for 20% off), I still buy all of these for myself because I love how them so much.
Next, around 11:00 am or so, I feel mildly hungry and have been obsessed with cashew butter on a brown rice cake. So simple but so dang good. A few hours later I make my staple salad. I try to always have some form of meat and cooked sweet potato ready to go in the fridge so I can throw it on greens. It’s always spinach, tomato, cucumber, cilantro, some sort of protein, roasted sweet potatoes, crumbled goat cheese, and I top it with a spicy peanut dressing from Trader Joe’s. And to keep life simple, I have been doing so much of the same for dinners! I generally eat the same in the day and change it up at dinner. Friday is always pizza movie night in our house and I often buy cauliflower crust and top mine with red sauce, lots of veggies, and goat cheese. The rest of the week I revolve around a lot of the same!
Here are my top five favorite dinners and my kids love them all too! Everything I make starts with these recipes but I always tweak and build upon them with new flavors and additions.
Spaghetti Squash with Spicy Arrabiata Sauce and Goat Cheese
Roasted Veggies on White Rice - broccoli, carrots, bok choy, red onion, asparagus, mushrooms, cauliflower - you can do any veggies but these are by far my fave! I just top them with sriracha and coconut aminos.

And that’s what an average day/week looks like for me on the food front! Nothing too crazy or strict - I just try to balance out some of the sweets with lots of veggies!
