High Protein Reese's Peanut Butter Klondike Bars

Ingredients
Ice cream layer:
• 1 can (13.5oz) full fat canned coconut milk
• 1/2 cup peanut butter
• 1/3 cup raw honey
• 1 tsp pure vanilla extract
• 1/2 tsp salt (I used Maldon)
• 2 scoops protein powder (I used Truvani peanut butter - 40g protein)
• 1 scoop collagen (I used Vital Proteins - 18g protein)
Chocolate Shell:
• 2 dark chocolate bars (i used the brand Hu Kitchen)
Instructions
1. Add the ice cream ingredients to a high speed blender and blend until smooth and creamy. Pour the mixture into a 8x8 square pan lined with parchment paper and place in the freezer until frozen solid, at least 8+ hours (I started in a loaf pan but realized that was too small so changed it).
2. After 8+ hours, melt the chocolate in double boiler on the stove.
3. Remove the ice cream layer from the freezer and slice it into squares (I recommend putting half of the squares back in the freezer while you coat the first half in chocolate so they don’t melt).
4. Coat each ice cream square in melted chocolate, top with finishing salt, and then place on a tray lined with parchment paper. Place in the freezer until the chocolates shell has hardened, then enjoy!
