Garden Avo Crunch Sandwich

If you’re looking for a delicious veggie sandwich, then you have to try my Garden Avo Crunch Sandwich. I’ve been making this sandwich for YEARS for my kiddos and it’s always an enthusiastic “YAAAASSSS” every time it’s for dinner.

Ingredients

  • Sourdough bread

  • Mayonnaise (I use Primal Kitchen Foods)

  • English cucumber

  • Alfalfa Sprouts

  • ½ Avocado

  • Pickled Red Onions


Pickled Red Onion Recipe

  • 1 medium red onion, very thinly sliced

  • ½ cup water

  • ¼ cup distilled white vinegar

  • ¼ cup apple cider vinegar or additional white vinegar

  • 1 ½ tablespoons maple syrup or honey

  • 1 ½ teaspoons fine sea salt

Instructions

  1. Gently heat the mixture to dissolve the honey and then pour over red onions into a mason jar.

  2. Press onions down to fully submerge and let sit until completely cooled (20-30mins).

  3. At this point they’re ready to rip your sandwich

Sandwich Assembly

This is really an eyeball it situation!

  1. Grab your sourdough and slice to your thickness liking.

  2. Add mayo to both insides and crack some salt & pepper on.

  3. Slice your cucumbers thin and layer one side of the bread.

  4. Add sliced avocado.

  5. Add about 1/4 cup of pickled onions on top.

  6. Layer with desired amounts of sprouts.

  7. Drizzle outside of sandwich with olive before toasting your sandwich. (I’ve used both a panini press and a grill pan. Both turn out perfectly.)
